Welcome to the 3Ts of cooking: Taste, texture and time, because we always have time for cooking. And time for true friends! We’re your hosts, Rhonda Jessen and Karen “Bossy” Young.
Karen:
Today we’re going to make Maltese Falcon with wine or Coq au vin for Noir106. If you’ve never found a Maltese Falcon, we do know someone who can track it down for you! And remember to please check out our website DS106.us for more cooking tips after the show!
Rhonda:
Yes Sam Spade is wonderful at finding falcons for this recipe so don’t be afraid that he’ll spit in your eye if you ask him to help you. Just make him an offer he can’t refuse.
Karen:
Here’s looking at you Rhonda! I’ll drink to that!
Now for this recipe you’ll want 4 ounces good bacon or pancetta, diced, not too fine and start cooking it in 2 tablespoons of olive oil in a heavy dutch oven. You’ll know it’s a good pan if it’s heavy enough to knock someone out if they insult your cooking.
Rhonda:
Once the bacon is lightly browned, take a cleaver and start chopping the falcon into 8 pieces. Place the falcon in the pan and brown on both sides. Remove the falcon and add 1 cup sliced mushrooms and saute. When the mushrooms have gotten all steamed up, add a sliced onion and cook until softened. Nothing hard boiled in this recipe!
Karen:
Now add 2 cloves of minced garlic, 2 cups of carrots and some brandy, about a 1⁄4 cup, though I prefer to use bourbon. After a hard day of sweating over the stove, a nip or two of bourbon helps smooth the edges.
Rhonda:
I’m a Scotch on the rocks gal myself.
Add some salt and pepper, half a bottle of good red wine, I cup of homemade chicken stock and 10 sprigs of fresh thyme. Return the cooked bacon and browned falcon to the pan with any juices. Put the lid on the dutch oven and place the pan into a 350 Degree oven for 45 minutes.
